APPLE AND CARROT MUFFINS

Moist, tasty and nutritious apple and carrot muffins that you don't need to think twice before eating.


Two staple foods that I all ways have in my fridge are apple and carrots. I thought it would be a great idea to combine these two ingredients to make delicious muffins that you can enjoy for breakfast or as a snack. To amp up the yumminess of this muffins, I have created a nut butter frosting that is to die for!


APPLE AND CARROT MUFFINS

Preparation time: 20 minutes

Cooking time: 20-25 minutes

Makes: 12

Ingredients for cakes




½ Cup/ 125ml finely grated carrots

½ Cup/ 125ml finely chopped apple

½ Orange zest and juice

¼ cup/ 60ml raw dark brown sugar

1/3 cup/ 80 ml melted coconut oil or vegetable oil

1t/ 5ml vanilla essence

½ t/ 2.5ml Bicarbonate soda

½ cup/ 125ml Bran flour

½ cup/ 125ml Whole wheat flour

½ cup/ 125ml Oats flour (ground oats)

1t/ 5ml Baking powder

1t/ 5ml Cinnamon powder

1t/ 5ml Ginger powder

Pinch of salt


Ingredients for topping



½ cup/ 250ml nut butter

1/3 cup/ 80ml Shredded coconut (extra for decorating)

1t/ 5ml vanilla essence


Method



1. Preheat oven to 180°C. Combine wet ingredients in a large mixing bowl. In a separate bowl combine dry ingredients. Pour dry ingredients into wet and mix well.

2. Pour cupcake mixture into lined muffin tin and bake for 20-25 minutes.

3. For the topping, combine any nut butter and vanilla in a medium bowl. Use a whisk to mix the ingredients until creamy and smooth.

4. Once mini cakes have cooled, remove lining and cut in half, this part is easier to do when the mini cakes have cooled and rested overnight. Spoon topping mixture on one half of the mini cake, sandwich the mini cakes together. With the remaining mixture top each cake and decorate with shredded coconut.


How to make flax egg?

Add 1 Tablespoon of ground flaxseeds into a small bowl. Pour in 3 Tablespoons of water and mix until flaxseeds and water are combined. Leave for 5 minutes to all the flaxseeds to gel up.
