I love brownies and so does my family. So, any chance I get to make a healthy brownie for all of us to enjoy, I take it.
Black bean brownies are a craze on the internet. They have every right to be, they are so GOOD! I have created my take on this internet sensation and made these brownies vegan friendly, gluten free and super chocolaty. I hope you enjoy!
Black bean brownies
Preparation time: 10 minutes
Cooking time: 20 minutes
1½ cups/ 375ml black beans
1/3 cup/ 80ml coconut sugar or brown sugar
1/3 cup/ 80ml coconut oil (melted)
1t/ 5ml vanilla essence
¼ cup/ 60ml strong black coffee
¼ cup/ 60ml cocoa powder
1t/ 5ml baking powder
A pinch of bicarbonate of soda
½ t/ 2.5ml salt
1 cup/ 250ml oats
½ cup/ 125ml apple sauce
1. Preheat the oven to 180°C and lightly grease a small square baking pan.
2. In a food processor or blender (Food processor works best), add in your black beans and blend until smooth as possible.
3. Then add in the remaining ingredients and blend until well combined. Pour the mixture into your prepared baking pan and sprinkle over chocolate chips (totally optional but incredibly) yummy.
4. Bake for 15-20 minutes. It will look undercooked but it is not. Allow it to cool for 10 minutes or overnight in the fridge for it to firm up before cutting and enjoying.
