Brown lentil stew and rice
Preparation time: 10 minutes
Cooking time: 40 minutes
1 ½ cups/375ml brown rice
1 cup/ 250ml dry brown lentils
1 medium onion (roughly chopped)
8 cups/2000ml water
1 vegetable stock cube
Black pepper to taste
1 cup/ 250ml soya mince (Any brand will work)
1. Cook rice according to package instruction.
2. In a large pot combine lentils, onion, 4 cups of water, stock cube and pepper. Cook for 30 minutes or until the lentils are tender.
3. Add in soya mince and the remaining water. Cook for 10-15 minutes until the soya mince is soft and tender.
4. Serve the stew with the prepared rice and any side of vegetables.
