The Easter celebrations continue with a carrot cake inspired oats. This morning porridge is filled with healthy ingredients that will nourish your body, plus it taste like having dessert for breakfast.
Can you imagine all the flavour of carrot cake in one delicious bowl. You don't have to imagine it any more, now you can make it. This warm and cosy porridge, that taste absolutely fantastic will make anyone's morning.
I don't know why I have never shared this recipe on my blog? but better late than never. Because honestly this is a spectacular recipe. This recipe is great for large families because it makes a lot of porridge. Not to fear if you are living alone because this recipe is excellent for meal prep.
The ingredients to make this porridge are super affordable, especially now in South Africa as we are heading into winter you can buy carrots at a steal. All the other ingredients are ingredients that you can find in any supermarket and you might be surprised and find them on a special.

Carrot Cake Oats Porridge
Preparation time: 15 minutes
Cooking time: 15 minutes
2 cups/ 500ml oats (ground up)
1t/ 5ml cinnamon powder
¼ t/ 1.25ml nutmeg
½ t/ 2.5ml ginger powder
2x ¼ cup/ 120ml raisins
1 cup/250ml carrot (coarsely grated)
6 cups/ 1.5L water (add more or less for your desired consistency)
½ cup/ 125ml unsweetened applesauce
1t/5ml vanilla essence
Syrup to drizzle over
1/3 cup/ 80ml carrot (coarsely grated)
¼ cup/ 60ml nuts of choice (roughly chopped)
1. In a pot combine ground up oats, cinnamon, nutmeg, ginger, salt, raisins, carrot and water. Cook for 15 minutes on a medium heat. Stirring occasionally.
2.Remove the porridge from the heat and stir in apple sauce and vanilla.
3. Pour the porridge into serving bowls, garnish with a drizzle of syrup and a sprinkle of carrot and nuts on top.
