COUNTRY HERB CASHEW CHEESE

½ cup/ 125ml cashew nuts
¼ cup/ 60ml unsweetened non-dairy milk or dairy milk
2T/ 30ml nutritional yeast
1t/ 5ml natural country herbs
½ t/ 2.5ml natural garlic flakes
Natural Himalayan salt and black pepper to taste
½ t/ 2.5ml brown sugar or sweetener of choice
Juice of ½ a lemon
2t/ 10ml coconut oil
1. Soak the nuts in cold water overnight.
2. Drain and rinse the nuts. Add the nuts and the rest of the ingredients into a food processor.
3. Blend until smooth and creamy.
4. Chill the cheese in the refrigerator for 1 hour before enjoying. Store any remaining cheese in the refrigerator for up to 2 weeks.
Serve the cheese with fresh veggies and crackers, use the cheese as a spread on toast or stir in with some cooked vegetables to impart more flavour.
