
COUSCOUS PORRIDGE
An easy, warm and tasty breakfast couscous porridge, topped with fresh gooseberries, tangy yoghurt and crunchy mixed nuts.

So, are you bored of eating oats and eggs on toast in the morning? This easy porridge recipe will give you back your breakfast groove.

It might sound weird having pasta for breakfast, but trust me, you will definitely love this healthy, quick and delicious breakfast.

Couscous porridge

Serves: 2
Ingredients
Porridge:
½ cup/ 125ml whole wheat couscous 2T/ 30ml wheat bran or oats bran 1/3 cup/ 80ml ground oats 1t/ 5ml cinnamon powder Pinch of salt 2T/ 30ml honey or sweetener of choice 1t/ 5ml vanilla essence 1 cup/ 250ml boiling water ½ cup/ 125ml warm low fat, fat free or non-dairy milk ½ cup/125ml gooseberries/ golden berries
Garnish:
½ cup/ 125ml gooseberries/ golden berries ¼ cup/ 60ml yoghurt ¼ cup/ 60ml mixed nuts
Method:
1. In a medium bowl combine couscous, wheat bran, oats, cinnamon and salt. Mix all the ingredients together until evenly distributed. 2. In a large coffee mug combine honey, vanilla, water and milk. Stir well until the honey is completely dissolved. Pour the liquid over the dry ingredients, ensuing that the liquid completely covers the dry ingredients. Cling wrap the bowl immediately and set the porridge a side for 10-15 minutes. 3. Meanwhile, in a small bowl mash up berries that will be mixed into the porridge. 4. Once porridge is ready (to make sure that the porridge is ready, check if the couscous cooked) mix in the mashed berries. 5. Serve the porridge into two bowl, garnish with more berries, yoghurt and nuts.

To enjoy this porridge all year round, replace the gooseberries/ golden berries with whichever fruit is in season. Fruits such as strawberries, bananas, mango, pawpaw or pineapple.
