These no bake double chocolate peanut bars are simple and can be prepared in about 15 minutes. The perfect easy dessert, snack or cheeky breakfast for chocolate peanut lovers.
I can't even being to put it in words my love for chocolate and peanuts. So, I decided to make thick, rich and decadent chocolate peanut bars to satisfy my love and cravings for these two fantastic ingredients.
I have definitely out done myself with this bars. They are super delicious, crunchy but also have a smooth velvety texture, thanks to the double chocolate I have added.

Double chocolate peanut bars
Preparation time: 15 minutes
Cooking time: 5 minutes
Makes: 14 bars
Ingredients for base
2 cups/ 500ml rolled oats (toasted) 1 cup/ 250ml peanuts Pinch of salt 160g dark chocolate 3T/ 45ml soya milk or milk of choice
Ingredients for topping
2T/ 30ml coconut oil
¼ cup/ 60ml cocoa powder Honey or liquid sweetener of choice to taste 2T/ 30ml peanuts or mixed nuts 2T/ 30ml chocolate chips or chopped dark chocolate
1. Line a small loaf pan with wax paper, and set aside. 2. In a food processor combine oats and peanuts, process until a medium coarse flour is formed. 3. Break chocolate into small pieces and place in a small bowl. Warm milk until hot, pour the milk over the chocolate. Stir the chocolate and milk until the chocolate is completely melted. If the chocolate does not completely melt, pop it into the microwave for a few seconds at a time until the chocolate is completely melted. 4. Pour the chocolate over the course flour and process until a dough is formed. 5. Place the dough into the prepared loaf pan, using to hands press down the dough until an even layer is formed. Refrigerator for 1 hour. 6. Meanwhile melt coconut oil add in cocoa powder and honey, whisk all the ingredients together to form “chocolate sauce”. The “chocolate sauce” will harden once refrigerated and will resemble and taste like chocolate. Roughly chop nuts, keep some pieces whole to give texture to the bars. 7. Remove loaf pan form the refrigerator, pour over the chocolate sauce, sprinkle nuts and chocolate chips. Refrigerator for 1 hour before cutting into bars. 8. Store in the refrigerator for 3 weeks or in the freezer for 2 months in an airtight container.

The best way to toast oats without burning the it, is to place the oats into a large pan and cook the oats over a low medium heat until the oats is golden brown in colour. Make sure to keep a close eye on the oats as it tends to burn easily.
