Frozen Fruit Popsicles



There is nothing better than enjoying a popsicle on a hot summer's day. The problem is that store bought popsicles are loaded with sugar, colorants, flavourings and preservatives. Homemade popsicles are much healthier and cheaper to make. My healthy fruit popsicles are made out of real fruit. You will not find any artificial colourings or flavourings in these popsicles. They are extremely easy prepare and only use four ingredients or less.

All these popsicles can be enjoyed as a snack, dessert or even a quick breakfast. Fruit popsicles are also great as an afternoon snack for kids.

1. Chocolate dipped frozen banana popsicles



Preparation time: 10 minutes Cooking time: 0 minutes Serves: 4

Ingredients

2 large bananas

240g dark chocolate

4 wooden popsicle sticks

Method

  • Cut each banana in half and carefully insert the wooden popsicle sticks.

  • Place the bananas on a baking tray or freeze proof container, make sure the bananas are not touching or sitting on top of one another. They will freeze together! Freeze the bananas for 4 hours or overnight.

  • Melt dark chocolate and pour into a tall coffee mug. Dip the frozen bananas into the melted chocolate to coat the entire banana. Place chocolate coated bananas on a baking tray lined with baking paper.

  • Since the bananas are frozen the chocolate will automatically harden and set, you can enjoy the popsicles immediately.

  • Store any remaining popsicles in the freezer for up to 3 months.

Why not try... Drizzling peanut butter on top of the chocolate coated bananas, freeze for 30 minutes, so that the peanut butter can harden, before enjoying.

2.Chocolate drizzled frozen watermelon popsicles



Preparation time: 10 minutes Cooking time: 0 minutes Serves: 8

Ingredients

1 large watermelon sliced circle

80g dark chocolate

8 wooden popsicles sticks

Method

  • Cut watermelon circle into wedges or into your desired shape.

  • Carefully inset wooden popsicle sticks. Place watermelon on a baking tray or in a freeze proof container. Make sure the watermelon is not touching or sitting on top of one another. They will freeze together!

  • Freeze the watermelon for 4 hours or overnight.

  • Place frozen watermelon on top of a cooling rack, melt dark chocolate and drizzle over the frozen watermelon.

  • Since the watermelon is frozen the chocolate will automatically harden and set, you can enjoy the popsicles immediately.

  • Store any remaining popsicles in the freezer for up to 3 months.

Note… Cut the watermelon circle thick enough to be able to insert wooden popsicle sticks. If you cut the watermelon too thin the watermelon will break will inserting the sticks.

3. Yogurt dipped frozen watermelon popsicles



Preparation time: 15 minutes Cooking time: 0 minutes Serves: 8

Ingredients

1 large watermelon sliced circle

3 cups/750ml plain dairy or no dairy yoghurt

80g dark chocolate

8 wooden popsicles sticks

Method

  • Cut watermelon circle into wedges or into your desired shape.

  • Carefully inset wooden popsicle sticks. Place watermelon on a baking tray or in a freeze proof container, make sure the watermelon is not touching or sitting on top of one another. They will freeze together!

  • Freeze the watermelon for 2 hours.

  • Place yoghurt in a bowl and dip the partly frozen watermelon into the yoghurt, to coat the entire watermelon. Place watermelon back onto a baking sheet or freeze proof container lined with baking paper, freeze for 4 hours or overnight.

  • Place frozen yoghurt covered watermelon on top of a cooling rack, melt dark chocolate and drizzle over the watermelon.

  • Since the watermelon is frozen the chocolate will automatically harden and set, you can enjoy the popsicles immediately.

  • Store any remaining popsicles in the freezer for up to three months.

Note… Cut the watermelon circle thick enough to be able to insert wooden popsicle sticks. If you cut the watermelon too thin the watermelon will break will inserting the sticks.

Why not try... Freezing fruits such as pineapple, mango or kiwis into popsicles. You can dip or drizzle the fruits in nut butters, yogurts or chocolate.
