Following healthy lifestyle doesn't mean you can't have your cake and eat. Most people think eating healthy means cutting out all sugar from your diet. Which is not true, having sugar in moderation will not "damage" your diet, but it will definitely keep you happy and enjoying the healthy lifestyle.

I recently celebrated my birthday and this is the cake I served my family and friends, on my birthday (16th of March).

I was not planning on posting this recipe, but I got so many requests for this recipe from my friends and family. So, I decided to share this delicious cake recipe with all of you, hopefully you will love it as much as my loved ones do.

Healthy carrot cake with vegan cream cheese frosting

Preparation time: 10 minutes

Cooking time: 20-25 minutes

Serves: 8-10




1 cup/ 250ml grated carrot

¼ cup/ 60ml whole wheat flour

¼ cup/ 60ml rice flour

¼ cup/ 60ml coconut flour

2T/ 30ml corn flour

1t/ 5ml baking powder

¼ t/ 1ml bicarbonate soda

Pinch of salt

1t/ 5ml cinnamon powder

½ t/ 2.5ml ginger powder

¼ t/1ml nutmeg

1/3/ 80ml cup brown sugar

¼ cup/ 60ml mixed raisins

Zest of ½ orange

3 eggs

1/3 cup/ 80ml oil

1t/ 5ml vanilla essence

Juice of 1 orange


1 cup/ 250ml cashew nuts (soaked overnight)

¼ cup/ 60ml soya milk

2T/ 30ml lemon juice

1t/ 5ml vanilla essence

¼ cup/ 60ml brown sugar or coconut sugar

¼ cup vegan butter (melted)



1. Preheat oven to 175°C. Grease a small cake pan with oil, butter or cooking spray.

2. In a large bowl combine carrots and all the dry ingredients, give everything a gentle toss.

3. In a separate bowl whisk together eggs, oil, vanilla and orange juice. Add the wet ingredients to the dry and mix until just incorporated.

4. Transfer the batter to the prepared baking pan and bake for 20-25 minutes or until cooked through.

5. In a blender combine all the frosting ingredients, blend until smooth and creamy. Spoon over the top of the cooled carrot cake and spread over the cake, into one even layer. Refrigerate the cake for one hour before serving.
