Enjoy this yummy dessert with your mother on mother's day, as part of my two course dinner that you can preparing for your mother on her special day. This dessert is as sweet as your mother and is the perfect finish to a dinner or the perfect sweet start to her day.

Healthy Vegan Chocolate Mousse
Preparation time: 10 minutes
Cooking time: 2 minutes
¾ cup/ 180ml low fat, fat free or non-dairy milk
¼ cup/ 60ml strong coffee (cold)
2t/ 10ml vanilla essence
2T/ 30ml honey or any liquid sweetener
¼ cup/ 60ml chia seeds
¼ cup/ 60ml unsweetened cocoa powder
Pinch of salt
40g unsweetened dark chocolate
1. In a medium mixing bowl combine all the ingredients except the chocolate. Whisk all the ingredients together and let it set for 5 minutes.
2. Transfer the chocolate mixture into a blender, melt chocolate and add to the blender, blend the chocolate mousse until thick and creamy.
3. Pour into serving glasses and refrigerator for 3 hours or overnight.
4. Once ready to eat, garnish with fresh mint and dark chocolate shavings.
Why not try…
Add ½ t/ 2.5ml chili flakes to make a chocolate chili mousse or zest ½ an orange to make chocolate orange mousse, go wild with different chocolate flavour combinations.
If you are not a fan of coffee replace the coffee with milk of choice.
