These lemon poppy seed muffins are light and fluffy, they honestly taste like freshly baked ones from a bakery but without the tons of refined ingredients. So, these yummy muffins make for a guilt free breakfast or snack.

Lemon poppy seed muffins

2 large eggs or flax eggs

¾ cup/ 180ml apple sauce

½ cup/ 125ml brown sugar or coconut sugar

1 large lemon zest and juice

2 cups/ 500ml oats flour

2t/ 10ml baking powder

½ t/ 2.5ml bicarbonate of soda

A pinch of salt

1 cup/ 250ml rice milk or milk of choice

¼ cup/ 60ml poppy seeds



1. Preheat the oven to 180°C. Lightly grease or line a muffin pan.

2. In a large mixing bowl combine eggs, apple sauce, sugar and lemon. Whisk together until the sugar dissolves.

3. Add the remaining ingredients and mix until well combined. Evenly fill up the muffin holes with muffin batter. This batter will make exactly 12 muffins.

4. Bake for 15-20 minutes until the muffins are golden and cooked through. Allow to slightly cool before removing from the pan. Serve the muffins hot or cold.
