Sweet and spicy carrot fritters served with a refreshing mint mayo.

Have you ever had tons of carrots sitting in your fridge and you did not know what to do with them. Well here is an oil and gluten free recipe for carrot fritters. It blows my mind how quick and simple this recipe is. These fritters are fantastic on their own as a snack or added into meals.

Spicy Carrot fritters

Preparation time: 10 minutes

Cooking time: 7 minutes

Serves: 2




1 large carrot (coarsely grated)

¼ large green pepper (roughly chopped)

1 small onion (finely chopped)

Salt and black pepper to taste

½ t/ 2.5ml dry crushed garlic and chilli

A pinch of cumin seeds

A pinch of fennel seeds

¼ t/ 1.25ml garam masala

½ t/ 2.5ml baking powder

½ cup/ 125ml chickpea flour

Mint mayo

2T/ 30ml low fat mayonnaise

1 T/ 15ml fresh mint, finely chopped

1 lemon



1. Preheat oven to 200°C. Line a baking tray with baking paper.

2. In a large mixing bowl, combine all the fritter ingredients and ttir to combine. The mixture should be sticky and moist.

3. Pour out spoon-fulls of the mixture onto the prepared baking tray, flatten and bake for 5-7 minutes until lightly golden.

4. To prepare the mint mayo, combine all the ingredients into a small mixing bowl. Add in some black pepper and stir to combine. Serve the fritters with the mint mayo.

Serving suggestion…

Add a few fritters into a whole wheat wrap or pita bread. Add in fresh tomato, cucumber and lettuce, top with the mint mayo. Perfect for lunch or a light dinner meal.
