Summer Berry Smoothies



I personally think that every recipe website/blog must at least have one smoothie recipe. This week I am coming to you with two smoothie recipes that I created together with my brother (Nhlanhla Mgobhozi). My brother and I started our weight loss journey together, it was not always easy but at least we had each other when times were tough.

I found it fitting that I would create these smoothies with him because we always tried having smoothies for breakfast. We really tried being creative with our smoothies, so we would not have the same smoothie every morning. Smoothies are a great way for my brother and I to sneak in those extra vegetables, to make sure that we get our five a day.

Keeping with our tradition we have snuck in some very unusual vegetables into our smoothies. You will be surprised to know, that the vegetables change the texture and the flavour of the smoothies. The vegetables actually help to enhance the flavours and the texture of the smoothie, without adding excessive calories.



The two smoothies we created are incredibly easy to make. All you need is a blender preferably a high speed blender that is at least 1000 watts, so that it is able to blend frozen fruit. If you don't have a high speed blender, thaw the frozen fruit for 30-60 minutes at room temperature, to make it easier for your blender to blend your smoothie.

One of our smoothies tastes so much like a milkshake so we had to call it a creamy vanilla strawberry and cauliflower milkshake. The second smoothie is very hydrating and cooling and it deserves to be called a refreshing blueberry and zucchini (baby marrow) smoothie.

Summer comes with an array of berries. One of the best ways to capture the berries nutritious and vibrate colour is in a smoothie, The best thing about smoothies is that they are very versatile. So, if you do not have berries please substitute the berries with any other fruit or vegetable you might have on hand, such as pear, kale or mango.


Creamy Vanilla Strawberry and Cauliflower Milkshake

Preparation time: 5 minutes

Cooking time: 0 minutes

Serves: 1

Ingredients

½ cup/ 125ml milk

½ cup/ 125ml yoghurt

1 cup/ 250ml frozen cauliflower

1 cup/ 250ml chopped strawberries

¼ medium avocado

1t/ 5ml vanilla essence

Sweetener of choice to taste

Method

  • Combine all ingredients into a blender, process until smooth. Pour into a glass and enjoy

Note…

This smoothie is quite thick you can add more milk or water to thin out the smoothie.


Refreshing Blueberry and Zucchini Smoothie

Preparation time: 5 minutes

Cooking time: 0 minutes

Serves: 1

Ingredients

½ cup/ 125ml 100% apple juice

1 cup/ 250ml water

1 cup/ 250ml frozen blueberries

1 cup/ 250ml frozen zucchini

2 small frozen bananas

1T/ 15ml flaxseeds

Method

  • Combine all ingredients into a blender, process until smooth. Pour into a glass and enjoy

Note…

This smoothie is quite thick you can add more apple juice or water to thin out the smoothie.
