
SUPER EASY SCONES
These super easy scones are made from whole wheat flour, they are low in fat and are also vegan. They make for the perfect snack or tea time treat. These scones can easily be made savoury or sweet, it just depends what you are in the mood for.

Healthy, easy and delicious scones perfect for any occasion. These scones come together in less than 30 minutes. You can enjoy them warm straight from the oven or the next day with any filling of your choice.
These scones are extremely versatile, add in any sweet or savoury flavours to make them your own.

Super easy scones
Preparation time: 10 minutes
Cooking time: 12-15 minutes
Makes: 15
Ingredients:
3 Cups/ 750ml Whole wheat Flour (sifted)
2 T/ 15ml baking powder
2T/ 15ml coconut sugar or brown sugar
Pinch of salt
3/4 cup/ 180 ml coconut cream
1t/ 5ml lemon juice
3/4 cup/180 ml sparkling water
1/4 cup/ 60ml milk
Method:
1. Preheat oven to 200°C. Line baking tray with baking paper.
2. Combine all the ingredients except milk in a large mixing bowl, mix the ingredients until a dough is formed. Add more flour if your dough is too sticky.
3. Do not knead or over mix the dough. Sprinkle flour on a working surface and with a rolling pin, roll out the dough to 2 cm thick.
4. With a cookie cutter cut out scones from the dough and place on a line baking tray.
5. Brush the scones with milk (Low fat, fat free or non-dairy milk) on top and bake for 12-15 minutes.

Savory scones
To the dry ingredients add:
4 T/ 60ml chopped chives
1t/ 5ml dry thyme
1t/ 5ml paprika
1/4 cup/60ml grated cheese (Reduced fat cheddar or gouda cheese will work well), for vegan option add 2T/ 15ml nutritional yeast.
Fruity scones
To the dry ingredients add:
1/3 cup/ 80ml sultanas, raisins or dried fruit of choice.
Best enjoyed with…
Serve the scones with vegan butter or margarine and jam of preference,
Or can be enjoyed as is with a warm cup of tea.
