
SWEET AND SOUR BEETS
Beets have a very robust and earthy flavour. It is best to balance out that rich flavour with sweet and sour notes.

These beets can be a delicious side dish to any Christmas lunch or dinner.
In our family beets are always on the menu for Christmas lunch and dinner. I wanted to change it up this year with sweet and sour beets, which have tons of flavour from the onion, apple and honey, as well as the apple cider vinegar.

Sweet and sour beets
Preparation time: 10 minutes
Cooking time: 60 minutes
Serves: 6-8
Ingredients
5 medium beetroots 1 medium apple (finely chopped)
1 small onion (finely chopped) 1T/ 15ml honey or sweetener of choice 2T/ 30ml apple cider vinegar ½ t/ 2.5ml cinnamon powder A pinch of salt
Method
1. In a medium pot, boil beetroot for 45-60 minutes until tender. Set the beetroot aside to completely cool. 2. In a large bowl, coarsely grate the beetroot and add in the rest of the ingredients. Give the beetroot a good mix until all the ingredients are well combined. 3. Serve the beetroot immediately or leave in the refrigerator for 1 hour to allow the flavours to mingle. Enjoy!
