
SWEET POTATO AND TOMATO SOUP
Keep warm this winter with a spicy sweet potato and tomato soup. With just a few ingredients this soup is simple, nutritious and sweet. Beating the cold has just become a whole lot tastier. Sweet potato and tomatoes are a match made in heaven. The sweet flavour of the potatoes eases the tartness of the tomatoes and enhances its fruity aromas. Paired with the right herbs and spices, this match made in heaven can be a match made for your kitchen. This soup is perfect on its own for lunch or dinner, but for some crunch sprinkle over some toasted seeds or croutons.

Sweet potato and tomato soup

Servings: 8-10
Ingredients
1T/ 15ml olive oil
1 brown onion, roughly chopped
1 red or orange pepper, roughly chopped
1 clove of garlic, roughly chopped
1t/ 5ml Natural ginger powder
1t/ 5ml tomato puree
½ t/ 2.5ml Natural paprika (optional)
Natural Himalayan salt and pepper to taste
2t/ 10ml Natural country herbs
2 large sweet potatoes, peeled and chopped
2 vegetable stock cubes
6 cups/ 1.5L Water
1 Tin tomatoes
1T/ 15ml honey or sweetener of choice
Method
1. In a large pot fry onion, red pepper and garlic with oil. Once onion is translucent add ginger, tomato puree, paprika, salt, pepper and herbs. Fry for a further 30 seconds.
2. Add sweet potato, stock cubes and water (you might need extra water to thin out the soup later on.) cook for 20 minutes or until sweet potato is soft. Add in tomatoes, honey and cook for 5 minutes.
3. Using a blender or a hand blender, puree the soup to your desired consistency. Add more water if the soup is thick. Serve the soup warm in soup bowls or mugs.
