Mother's day is the perfect time to show your mother how much you love, care and appreciate her. What better way to do this than through food.
This year I have decided to spoil my mother with a two-course dinner. This Mothering Sunday dinner will consist of a spicy main and a velvety chocolate dessert.
Let's start of our mother's day celebration with our main course which is, this beautiful flavour packed curry that take less than 30 minutes to prepare. All you need is a big bag of frozen mixed vegetables, onion, spices and yoghurt.
Just like that you have a warm and hearty meal that you can serve to your mother.
The Easiest Vegetable Curry
Preparation time: 10 minutes
Cooking time: 20 minutes
1T/ 15ml oil 1 brown onion (roughly chopped) 1T/ 15ml curry powder 2 red chilies (optional) ½ t/ 2.5ml cumin powder ½ t/ 2.5ml turmeric powder Salt and black pepper to taste 1t/ 5ml garlic powder 1t/ 5ml ginger powder 1 kg bag of country mixed vegetables 1 bunch of spinach (washed, stems removed and chopped) ¾ cup/ 180ml plain low fat or non-dairy yoghurt or coconut cream ¼ cup/ 60ml fresh chives or coriander
1. Heat oil in a large pot, fry onion for 2-3 minutes until translucent. Add spices and cook for a further 1 minute.
2. Add in the vegetables and water (be careful not to add too much water as the veggies will release some of its moisture), cover the pot and cook for 5-10 minutes until veggies are tender, add in spinach, cover the pot again and cook for 5 minutes until spinach has wilted.
3. Remove pot from heat, stir in yoghurt and garnish with chives.

Serve the curry with brown rice or cauliflower rice for a low carb option.
