These vegan burrito bowls are super delicious. Packed with black beans, corn, savoury flavoured soya mince, tomato rice as well as guacamole and plain vegan yoghurt. Extremely yummy.
I love burrito bowls because they are easy to make and they tasty so delicious. It's basically everything you would put into a burrito, just without the wrap.
They make for wonderful weeknight dinners and can be assembled relatively quickly. What I also love about burrito bowls is that they make for a great meal prep.

Vegan Burrito Bowl
Preparation time: 25 minutes
Cooking time: 45 minutes
1t/ 5ml olive oil 200g lean minced beef or dark soya mince 1 green pepper (roughly chopped) Salt and pepper to taste
Rice and tomato mix
1t/ 5ml olive oil 1 medium brown onion (roughly chopped) 2 garlic cloves (finely chopped) 1t/ 5ml onion powder 1t/ 5ml garlic powder 1t/ 5ml paprika 1t/ 5ml chilli powder ½ t/ 2.5ml cumin powder Salt and pepper to taste 1t/ 5ml dry thyme 1t/ 5ml dry rosemary 2t/ 10ml honey 1 vegetable stock cube 5 medium tomatoes (skin removed and roughly chopped) ½ cup/ 125ml brown rice 3 cups/ 750ml water 1 cup/ 250ml sweet corn 1 can/ 400g black beans
2 small avocados ¼ cup fresh coriander ½ of a lemon Salt and pepper to taste
¼ cup plain low fat or non-dairy yoghurt Fresh coriander leaves Lemon (cut in quarters)
1. Heat oil in in a large pan on a medium heat, add in mince, green pepper and season with salt and pepper. Cook until mince in cook through. Once cooked set the mince aside. 2. In the same pan heat oil over a medium heat, add in onion and garlic fry until the onion is translucent. To the onion and garlic add in spices and herbs, mix the spices and herbs with the onion and garlic and fry for 1mintues. 3. To the onion mixture add in honey, vegetable stock cube and tomatoes. Cook the tomatoes on a medium heat for 10 minutes until the tomatoes are soft. Once the tomatoes are soft add in rinsed brown rice and water. Cook the rice on a low heat for 30-35 minutes or until the rice is nice and tender. 4. Meanwhile make the guacamole by, mashing the avocados and add coriander, lemon juice and salt and pepper to the mashed avocados. 5. Once the rice is cooked add in mince, corn and black beans cook until for a further 3 minutes until the ingredients are heated through. 6. Serve the rice in bowls, top each serving with guacamole, a sprinkle of coriander, a generous drizzle of yoghurt and a lemon wedge.
You can definitely use minced chicken or pork instead of minced beef or soya mince.
