VEGAN CHUNKY MONKEY ICE CREAM

Lusciously smooth and ultra-creamy soy milk ice cream, made with just six ingredients.

So, whether you are vegan, lactose intolerant or just want to try something new, this soy milk ice cream is the perfect choice for you.


Did we say how simple and easy it is to make? The only laborious task when it comes to making this ice cream is that you have to practice a little bit of patients.

Chunky Monkey Vegan Ice Cream


Preparation time: 5 minutes

Cooking time: 0 minutes

Serves: 4


Ingredients

3 cups/ 750ml Dewfresh soy milk

¾ cups/ 180ml Peanut butter

2T/ 30ml liquid sweetener of choice (optional, milk is sweetened)

¼ cup/ 60ml dried banana

¼ cup/ 60ml roasted peanuts

50g dark chocolate (roughly chopped)


Method

1. Whisk together milk, peanut butter and sweetener (if you are using sweetener). If you have an ice cream machine, pour the mixture in and churn according to manufacturing instructions. Once the ice cream is churned, mix in banana, peanuts and dark chocolate. Serve immediately or freeze for an hour or two for a firmer texture.

2. If you have a high speed food processor or blender, carefully pour the whisked ingredients into ice cube trays and freeze overnight. The next day blend frozen cubes until smooth and creamy. Mix in banana, peanuts and dark chocolate with a spoon. Serve immediately or freeze for an hour or two for a firmer texture.

3. If you don’t have an ice cream machine or a high speed blender or food processor, pour the whisked ingredients into a large shallow bowl and into the freezer it goes. After every thirty to forty-five minutes stir the ice cream to break up any ice crystals, then place back in to the freezer. Repeat the process until the ice cream reaches your desired consistency. This could take between three to four hours. Once the ice cream reaches your desired consistency, mix in banana, peanuts and dark chocolate with a spoon. Serve immediately.


Note…

Homemade ice cream is best served on the day, but you can of course freeze the ice cream and thaw for an hour before serving.
