
VEGAN OATS AND PEANUT BUTTER BISCUITS
These vegan oats and peanut butter biscuits, are made in one bowl and are ready within 30 minutes. They are crispy, hearty and delicious.

I got an opportunity to make my own coconut flour, and I thought what better way to use the flour than in oats and peanut butter biscuits. So, these biscuits are crunchy rather than chewy and soft. However, they make for the perfect healthy snack or breakfast. (Who doesn't want to have biscuits for breakfast?)
These biscuits will definitely become a quick favourite for any peanut butter fans.

Vegan oats and peanut butter biscuits
Preparation time: 10 minutes
Cooking time: 12-15 minutes
Makes: 15
Ingredients
1/3 cup + 4t/ 100ml oats flour (Ground up oats)
1/2 cup + 1T + 1t/ 150ml rolled oats
1/3 cup/ 80ml coconut flour
2T/ 30ml raw brown sugar or coconut sugar
1t/ 5ml cinnamon powder
Pinch of salt
½ cup/ 125ml peanut butter
1t/ 5ml vanilla essence
1t/ 5ml coconut oil (melted)
1 Chia egg or egg
½ T/ 7.5ml corn flour
3T/ 45ml water
Method
1. Preheat oven to 175°C. Place baking paper on a baking tray. In a large mixing bowl combine all ingredients excluding the water.
2. Mix the ingredients until it resembles crumbs. Add in water little at a time until a dough is formed (You might need more water or less water depending on the peanut butter you are using.) 3. Use a tablespoon to scoop out biscuit mixture, roll the dough into a ball and place on prepared tray. Using a fork press down on the biscuits, to flatten the biscuits. 4. Bake the biscuits for 12-15 minutes until golden brown on the edges. Make sure to keep an eye on the biscuits as they burn easily. Place biscuits on a cooling rack, once cold enjoy with a glass of milk or cup of tea.
