I scream, you scream, we all scream vegan vanilla ice cream.
This is a super easy vegan vanilla ice cream that is a mix between a refreshing sorbet and a creamy rich ice cream. This delicious dessert is refreshing, yet still light without the heaviness and sickly sweetness of store bought ice creams.
Vegan Vanilla Ice Cream
Preparation time: 5 minutes
Cooking time: 0 minutes
1 cup/ 250ml non-dairy cream
¼ cup granulated sweetener of choice
2 cup/ 500ml full fat coconut milk
2t/ 10ml vanilla essence
1. In a large bowl whisk cream, until light and fluffy and has stiff peaks.
2. Add honey, milk and vanilla and whisk until the sweetener is dissolved and the ice cream mixture is thick and creamy.
3. Pour the mixture into a freezer proof container and place in the freezer, stir the ice cream every 40 minutes until completely solid. Or pour ice cream into an ice cream machine and churn according to manufacturing instructions. Once the ice cream has churned place in the freezer to set, before serving.
