Nothing says Valentine's Day like a bright pink cake that is shaped like a heart. This cake is a sweet way to show your love to your loved ones or that special someone. You don't have to be an expert baker to create this cake, the recipe is simple, easy and taste amazing.
Very berry vegan cake
Preparation time: 20 minutes
Cooking time: 35-40 minutes
500g vanilla or berry flavoured cake mix
1/3 cup/ 180ml Canola oil
305ml unsweetened sparkling water
1 cup/ 250ml non-dairy milk
1 cup/ 250ml chopped strawberries
1t/ 5ml corn flour
1t/ 5ml lemon juice
250g vegan butter
1 cup/ 250ml icing sugar
2T/30ml non-dairy milk
1t/ 5ml vanilla essence
2t/ 10ml red food colouring
1. Preheat oven according to packaging instructions and lightly grease a small heart baking pan.·
2. In a large mixing bowl combine cake mix, oil, water and milk. Whisk all the ingredients together, until just combined. Do not over mix!·
3. In a small bowl mix together strawberries, corn flour and lemon juice. Place the strawberries into the cake batter and gently mix in the strawberries.·
4 .Pour the batter into the prepared cake pan and bake according to packaging instructions.· Remove the cake from the oven and allow to completely cool before icing.
5.Beat the butter, sugar, milk and vanilla together until light and creamy. Spoon out a 1/4 cup/ 60ml of the white icing and set aside. Drop in a few drops of the colouring and mix to incorporate the colouring.
6. Using a piping bag and nozzle ice on different patterns on the cake, use the pink and the white icing to give different texture and dimension to the cake. Refrigerate for 1 hour before serving to allow the icing to set.
