WARM RICE SALAD WITH A CREAMY DRESSING

A delicious warm rice salad with a blend of black beans, peas, green pepper and a creamy vegan dressing.

I love to have salads all year round!


When winter starts knocking on the door, I like to change up my salads to warm, filling and cosy meals. If you are a salad fan like me give this warm salad a try. I promise it will warm you up during the cold winter weather.

Warm Rice Salad With A Creamy Dressing

Preparation time: 25 minutes

Cooking time: 10 minutes

Serves: 3-4


Ingredients

Salad

1 vegetable stock cube

1 red onion (roughly chopped)

1 green pepper (roughly chopped)

1 cup/ 250ml frozen peas (thawed)

2 cups/ 500ml cooked brown rice

1 can of black beans (drained and rinsed)

2 T/ 30ml chopped coriander

Salt and pepper to taste

Dressing

1/3 cup/ 80ml cold dairy or non-dairy milk

1T/15ml vinegar

1t/ 5ml honey or any sweetener of choice

1t/ 5ml Dijon mustard

2t/ 10 dried herbs

Salt and pepper to taste

½ cup/ 125ml canola oil

Method

1. In a non-stick pan add in a few splashes of water, stock cube (crumble the stock cube in to help the cube dissolve quicker) and onion, then fry the onion for 2 minutes.

2. Add in green pepper and peas and fry for another 2 minutes. If the water has evaporated add in another splash of water.

3. Mix in rice and black beans, leave for a few minutes until rice and beans are warmed through. Stir in coriander and check for seasoning. Transfer salad into a serving bowl.

4. Time to quickly whip up the dressing. In a blender, combine all the ingredients except the oil.

5. Blend for 30 seconds to mix the ingredients together. On a low speed, slowly pour in the oil. Do not rush this step. The end result should be a creamy thick dressing.

6. Serve the rice salad with the creamy dressing.

Note…

Be careful how much dressing you use in this salad. The dressing is high in fat so use sparingly.

Tip…

The salad dressing can be used as a spread in sandwiches. Store the remaining dressing in the refrigerator for 2 weeks.
