I have created two amazing protein packed recipes using vegan protein powder. Thank you to my friends at Youthful Living for sending me a hamper of their vegan protein powder and some of their protein snacks. These are the products that I will use to create my recipes.
To start the protein festival, I have created a warm and nourishing bowl of protein porridge, which is perfect for this cold weather.
This recipe is a perfect example that protein powder is not only meant for protein shakes. My zucchini protein porridge not only packed with protein but also sneaks in some veggies and healthy fats. It's a winner in my books, the perfect breakfast to start your day.
Zucchini protein porridge
Preparation time: 5 minutes
Cooking time: 8-10 minutes
½ cup/ 125ml rolled oats
2 small zucchini (grated)
½ / 2.5ml ground cinnamon
1T/ 15ml bran wheat
1t/ 5ml ground flax seeds
1 cup/ 250ml water
30g/ 1 scoop Youthful Living vanilla vegan protein
1T/ 15ml peanut butter
1T/ 15ml peanuts (chopped)
1. Combine oats, zucchini, cinnamon, wheat bran, flax seeds and water into a small pot. Cook over a medium heat for 8-10 minutes, or until desired consistency.
2. Once cooked, stir in protein powder and spoon the porridge into a bowl and top with peanut butter and a sprinkle over chopped peanut and enjoy.
